What is an espresso?
In 1822, the demand for coffee and espresso cups grew, and a method was devised to press hot water through finely ground coffee using steam pressure. In 1900, specifically 1901, Luigi Bezzera patented an innovative process for preparing coffee. This resulted in a ‘first generation’ espresso machine that was exhibited at the international fair in Milan in 1906. In 1950, Ernesto Valente invented the first more commercial espresso machine. Making a real espresso is a delicate process and is defined by the following characteristics:
– 6.5 – 7.5 grams of coffee;
– 30 ml (milliliters);
– 20 – 30 seconds extraction time;
– 8 – 9 bar brewing pressure and
– 92 – 96 degrees Celsius.
In summary, it is about pushing water at about 95 degrees Celsius through about 7 grams of coffee under a pressure of about 8.5 to 9 bar for 25 to 30 seconds to make one espresso of 30ml. You recognize an espresso by the intense flavor, the brown crema layer, the low caffeine content, and the small espresso cup in which it is served.
Espresso as coffee consists of three basic flavors: acids, sugars, and bitters. That is why an espresso is stirred briefly in the espresso cup. If you don’t do that, your last sip will taste very sour because the acidic flavors settle at the bottom of the espresso cup. There are many different coffee types based on espresso, such as ristretto, caffe lungo, latte macchiato, and espresso martini. The basis of all these types is a deliciously brewed espresso but with its own twist, such as a milk or alcohol addition. The grind size of the coffee is also important for the taste. Finely ground coffee has more space to release aromas and will taste more bitter. If a coarser grind is used, the extraction process takes longer and more acidic flavors come forward.
